Elephant Yam / Suran phodi- Manglorean style

Suran or elephant yam is said to be very good for health. In case of wounds, or when a person is operated, my gran and mommy always say, eating suran helps heal the wounds quickly. A few people are allergic to this yam, I get severe itching and rashes on my hands when I touch it, so while cutting it, I always use gloves, a home remedy to reduce itching is to apply cococnut oil and tamarind water, before working on this vegetable. The marination is the most important part in making this dish

This recipe is tangy and spicy and is a delight to eat, on a rainy day.

Ingredients:

300 gms suran cut into i inch thick vertical pieces

a marble sized ball of tamarind or 2 tsp tamarind paste

1 tsp cumin powder

1 tsp red chilli powder

1 tsp turmeric powder

salt to taste

oil for frying

Method:

  1. Parboil the suran on a stove for approx 13 mins in water or microwaved on high for 2 mins. Keep it aside
  2. Place the tamarind in a micro-safe bowl, add some water and micro on high for 30 secs, or put the tamarind in hot water for 10 mins.
  3. Take a bowl, add all the powders, add the tamarind paste and salt and mix well.
  4. To this add the par boiled suran.
  5. Marinate this for approximately half and hour to one hour
  6. Take a pan and add oil for shallow frying
  7. Once the oil is heated, place the suran pieces one by one.
  8. Ensure that the flame is on medium, and let the pieces fry for approx 13 to 15 mins on each side

Take them out on a paper napkin. Serve immediately.
